Kid's Veggie Snack: The Great Pumpkin Spread

PumpkinWhat You Need:

1 (15 oz) can prepared pumpkin
1 tsp. cinnamon
¼ C pecans, finely chopped
1 (4 oz) pkg. cream cheese, softened
Graham crackers

How to Make It:

Place the pumpkin in a small saucepan.
Heat the pumpkin over low temperature just until warmed through.
Remove from heat and stir in cinnamon and pecans.
Allow mixture to cool slightly and then add cream cheese.
Mix well to combine all ingredients.
Spread on the graham crackers and serve.

This makes a great dip for fresh fruit also. Try some sliced apples, pears or even strawberries the kids will love it.

Movies…Who Still Goes?

We don’t get out much…but, we are big fans of the whole movie experience. We enjoy the frigid air conditioning, plush seating, and the built-in cupholders. I like the over-the-top buttery popcorn, frozen slushes, and jumbo packaged candy.

I also enjoy (on off-pay weeks) carting my large purse to the theater with my own goodies hidden inside. Yeah, I know, you’re not suppose to do that, but have you seen the price of tickets? They range from $9-$12 per adult, even more if it is a “special event” opening.

Then they get you at the concession stand, big time. Last time my husband and I went to the theater, it cost us $40 between the tickets and various munchies, drinks, etc. In this world of instant downloads, netflix (we’re members) and rapidly released dvds, who wants to spend the money to go to the movies?

We very occasionally go and anymore I think it’s for nostalgia reasons than anything else. If it were cheaper, we would probably go more but $40 is more than we spend between belonging to netflix, rentals, and purchasing dvds in an entire month!

In these economic times, one has to be careful where they spend their entertainment (rentals/purchasing vs. a 2 hour trip to the movies) money and people will inevitably go where they get the most bang for their buck.

Kid's Veggie Snack: Popeye's Favorite After School Snack

SpinachWhat You Need:

3 eggs, lightly beaten
1 C Parmesan cheese
4 scallions, chopped fine
1 stick margarine, melted
2 C herb stuffing mix
2 (10 oz) pkg. frozen spinach, thawed, squeezed and chopped

How to Make It:

Place the eggs in a large mixing bowl.
Add the cheese, scallions and margarine.
Crush the stuffing until it is very fine.
Add the stuffing to the mixture.
Add the spinach and stir to combine.
Preheat oven to 350 degrees.
Dampen your hands with a little water and shape the spinach mixture into 2 inch balls.
Place the balls on an ungreased cookie sheet.
Bake for 25 minutes.
Remove and allow to cool slightly before serving.

These can be made and frozen for up to 2 weeks before baking. Serve them with a side of sour cream or ranch dressing for dipping.

Loser Lohan (Lindsay Lohan vs. Sarah Palin)

Lindsay LohanAmong Lindsay Lohan’s other issues, now you can add to the list outright bashing people that she knows nothing about! Enter the continued celebrity bashing of Sarah Palin. I am still trying to figure out why those in Hollywood are so outspoken about political issues when they themselves are typically so out of touch with the rest of the world as far as morals, values, and lifestyles are concerned.

Isn’t it enough that the political pundits have to comment on every little thing that a person (and their family) are doing, have done, have ever thought of doing, from birth to present? Now we have to endure media coverage of celebrities pretending to be political pundits.

I’m all for free speech and agree that if you don’t like what a celebrity is saying, turn the channel (although this is harder because they get so much more coverage for their utterances – internet, radio, t.v., magazines, etc.) – but these celebrities are not saying anything profound. Lindsay Lohan’s rant about Sarah Palin ended with her saying “I agree with Pamela Anderson – she (Sarah Palin) can suck it!”

Thus, my nickname for Lindsay – Loser Lohan. If she thought of something original to say, I could think of a better one.

Mama Hack: Baby Bargains and Baby 411

Baby Bargains BookI suppose that if I’m being honest, I’ll have to admit that this Mama Hack is really more of a Papa Hack, as that’s whose utilized it the most in our house. Still, we all come out ahead, as it’s helped us save money and choose the best products for our baby.

Whether purchasing a breast pump to help us through those first few days of engorgement or a lightweight stroller to navigate The Strip on a recent trip to Las Vegas, we have turned repeatedly to a little book called Baby Bargains by Denise and Alan Fields.

I really like the book for a couple of reasons. First of all, buying all that baby stuff is seriously overwhelming. One store alone might be displaying 15 different “pack and play” options, and how am I supposed to know which ones are good? Should I purchase the Evenflow pump or the Avent pump? I mean, I’d never considered attaching anything to my boobies before the positive pregnancy test, so how was I supposed to be an expert all of a sudden?

I also really appreciate the fact that the authors use a sense of humor when writing about how to find the right furniture, toys, and maternity clothes (among other things). After reading book upon book and article upon article on serious topics teaching me how to keep my baby alive once it was on the outside, a little lighthearted reading was quite a relief.

In addition to helping you find bargains, the book also compares a number of items so you can make a more informed decision. After all, sometimes you really do get what you pay for and probably shouldn’t skimp. On the other hand, there’s no sense in paying an extra $100 for a feature that you later find out isn’t worth it.

Baby 411There are a number of other books by the same authors. As a shower gift, I received Baby 411, and we relied on it quite heavily in the beginning when everything was completely new and terrifying. Poor Jen (Jennifer Aniston's Luck in Love)

Jen's Broken HeartDoes anyone else feel bad for Jennifer Aniston? She seems to have the lousiest luck when it comes to men! America’s girl-next-door of Friend’s fame can’t seem to secure a long-lasting relationship. Although I hardly want to blame Jen, it’s probably the men. Start with ex-hubby Brad Pitt leaving her for Angelina Jolie, I still am trying to figure that one out and was always on Team Aniston.

Then there was Vince Vaughn, who I had major hopes for, I really like(d) him and thought someone like Vince would be good for Jennifer since he is so funny and laid back and she always seems a little too serious. Nope, they call it quits (yes there were other men in between and after, etc. but I am focusing on the ones that I thought would make it).

John Mayer seemed too good to be true what with the public canoodling (I really hate that word!)…but let’s not get started on him since, yup, you guessed it, he’s “history” now too! I would have left him too if I saw the photos of him snuggling with another woman in a hot tub…better luck next time Jen!

Raw Foods for Kids

I recently picked up this Raw Foods for Kids ebook and had to tell you about it.

I went on a 3 day raw food “fast” a couple of weeks ago, and enjoyed the experience very much. I ate as much as I wanted, as long as it was raw fruit and vegetable juices, smoothies, salads, cultured veggies, etc – all raw.

After the 3 days I slowly started eating cooked food again. My pants fit a little better, I went to the bathroom (a lot!) and felt a little lighter, a little more focused. I’ve decided to repeat the experiment whenever I’m feeling sluggish.

Have you noticed that often kids will eat raw fruits and veggies when they turn their nose up at cooked? I sure have.

This ebook contains 80 raw recipes that are kid friendly. (A couple were submitted by yours truly.)

Kid's Veggie Snacks: Yam I Am Chips

YamIngredients:

1 large sweet potato, sliced thin
1 TBSP olive oil
Salt to taste

Process:

Preheat oven to 350 degrees.
Place the sliced sweet potatoes on a cookie sheet in a single layer.
Drizzle with the olive oil.
Sprinkle with the salt.
Bake 10 minutes, flip and continue baking another 2 minutes or until a light golden brown.

The salt on these chips is optional. If you prefer a little sweeter taste, sprinkle them with a little cinnamon before baking.
