Grilled Vegetable Recipe

These are the perfect compliment to any grilled entree. The addition of cheese adds amazing flavor and texture.

Ingredients:

6 to 8 tomatoes, cored
2 small zucchinis, sliced in half
1 red pepper, quartered
olive oil
1 tablespoon chopped basil
1/2 teaspoon garlic
kosher salt
ground black pepper
4 large eggs
1/2 cup milk
1 cup shredded Gruyere cheese
1 cup breadcrumbs
Grated Parmesan cheese

Process:

• Coat the vegetables with olive oil and grill them over medium heat, turning them over at least once.
• After they are cooked, let them cool and then cut the vegetables into small pieces.
• Keep all the vegetables in a bowl and add the chopped basil, garlic, salt and pepper.
• In a another bowl, add eggs, milk and Gruyere cheese. Place the mixture over the vegetables and stir and then pour into a baking pan.
• Add the breadcrumbs and parmesan cheese to the mixture and grill on low heat for about 25 minutes or till cooked well.
